Papas Arrugadas
Have you ever wondered how to make the famed Papas Arrugadas or Canarian Potatoes perfectly? Then look no further!
Papas Arrugadas literally translates as ‘wrinkly potatoes’ and it’s actually really simple.
All you need is :
- A large saucepan
- Sea salt
- Small round, new potatoes of the Canarian variety, with the skins intact.
Take the saucepan and fill it full of water. The Canarians used to use see water, as there is obviously lots of it available in around the islands, however you will have to add your own sea salt. It needs to be very salty! The potatoes should float in the salt water, so if they don’t, add more.
Bring the pan to the boil and simmer for about 20 minutes.
Now drain most of the water from the pot and turn down the heat and gently shake the pot, so you are evaporating the remaining water and drying the potatoes without purning them. The salt should crystallise on the potatoes.
Finish by turning off the heat and covering the pot with a tea-towel for about 5 minutes. This will make the potatoes ‘wrinkle’.
Serve with red or green mojo.
